Who they are
Two very different performances of one character: Mane's is a mute brute in the first film, Schreiber's in Origins is a charming, malicious older brother who has been alive as long as Logan has and enjoyed it more. The two versions have never been reconciled, and Deadpool & Wolverine settles the matter in about eight seconds.

He started as an Iron Fist villain
Sabretooth was a generic mercenary in a kung-fu comic for a decade before anybody connected him to Wolverine, and the brothers business is later still. Claremont always intended him as Logan's father, which Marvel never let him confirm.
