Who they are
Zola builds the weapons, takes the notes and survives the war by being useful enough to recruit. Everything HYDRA does for the next seventy years runs on his filing: the serum work, the conditioning programme, and an algorithm that reads a life and decides whether it should continue. He is the franchise's argument that paperwork outlives armies.

Where this might be going
Guesses, not canon — reasoning from the comics and from what the films have already set up. None of it has happened on screen.
Why the species field still says human
PlausibleBy 1972 Zola exists as data on two hundred thousand feet of tape, and by 2014 he is a voice, a face and an algorithm — which reads as an artificial intelligence and is filed here as a human anyway. The distinction the films draw is that Zola was never copied: the body died while the mind was being written to the machine, and the thing in the bunker behaves throughout as a man who has been alive and bored since the Nixon administration. Calling him an AI would make him a program someone wrote, when the point of the character is that he is a scientist who refused to stop.
